Tips for Cooking with Wine

Avoid Oaky Wines
Wines like Cabernet Sauvigon and Chardonnay become bitter when cooked, so it's best to avoid these for cooking.

Use Sweet Wines for Dessert Recipes
Wines like Sauternes, Moscato and Sweet Riesling are the best choices for desserts.

Marinate Meats to Tenderize
When marinating meat or vegetables, use one cup of wine for every cup of oil.

Include Some Protein
If using wine in a sauce or dish, include some form of protein, like ground meat, egg or chuck roast, so that the tannins will bind to that protein.

Drier is Better When Using Sparkling Wine
When baking with sparkling wine, use a drier wine, like Prosecco, Cava or Cremant, so you have more control over the amount of sugar in the finished product.

Cook Off the Alcohol
When cooking with wine it's best to cook off the alcohol. Cook the wine mixture until it's evaporated and there is only about half the original.
